
Melt & Mix Honey Cake
1 3/4 cups self raising flour, sifted
3/4 cups caster sugar
1/2 cup honey
155g butter, melted
3 eggs, lightly beaten
3/4 cup sour cream.
Preheat oven to 180 degrees.
Place flour, sugar and honey in a bowl.
In a separate bowl, mix butter, eggs and sour cream until well combined. Add butter mixture to dry ingredients and stir until just combined.
Spoon mixture into a greased 25cm fluted ring tin and bake for 30 minutes.
Serve drizzled with honey and thick cream on the side.
I also added 1 teasp of mixed spice to mine.
It's good, try it - it's also quick to make.
So while us mums sat around and ate cake our kids were playing with a $1 bag of shredded paper my sister picked up at an education supplies shop. Best $1 she ever spent - kept them entertained for ages.
